"When I was fifteen I told my parents I was leaving school to become a chef.
To my surprise they said “go for it” and so I did.
From Vue de monde in Melbourne, Marque and Firedoor in Sydney to some of the most iconic restaurants in London, Antwerp, San Francisco, Mexico City, Sao Paulo, Bangkok, Singapore and even La Paz in Bolivia I have learnt from the best.
At twenty two I still have so much more to learn but the time feels right to open the doors of my first restaurant.
The Atlas Dining menu will forever evolve to reflect multicultural Australia. Every four months I will explore the cuisine of a different country that I have visited, adding my own special twist on what I have learnt during my travels.
Using the best, locally sourced ingredients, the majority of the dishes will be ‘touched by fire’ using a custom designed wood oven, hearth and grills, creating unique wood fired flavours. The beverage menu will also be inspired by the region and evolve as the menu changes.
I plan to push the boundaries as a chef and push the boundaries of your dining experience.
